I am happy to continue Dashing Holiday Recipes with Claire Calvin. She is nice enough to give us two recipes. One for salsa and one for guacamole. Chips and dip are perfect for holiday parties, Claire is known for her Tex-Mex flair and these two recipes don’t disappoint. If you don’t know Claire, she runs Dinners on the Porch, along with Alex Flowers. DOTP is a company that delivers dinner to your porch most Tuesday nights. Claire has a new adventure as well. The Porch is a restaurant and cantina that will have fresh and frozen prepared foods every night and a dinner menu on Friday and Saturday nights. It’s going to be a great place for grabbing a healthy dinner on a crazy Monday or for families to hang out on Friday evening. Whew… Claire has a lot going on!
Here are the recipes:
Homemade Salsa Fresca:
In a blender, combine all the following ingredients and puree.
2 cans Rotel tomatoes & green chiles
3-4 cloves of garlic
1-2 fresh pickled jalapenos (if you want it spicy!)
1 bunch cilantro
3-4 green onions
1 teaspoon sugar
Salt to taste (2-3 teaspoons)
Everyone’s Favorite Guacamole:
4-5 ripe avocados, mashed with a potato masher (a ripe avocado should give a little when you squeeze it)
1/4 finely diced purple onion
3-4 finely diced pickled jalapeños
1/2 bunch chopped cilantro
1/2 cup halved grape tomatoes or diced red peppers
1/4 cup juice from pickled jalapeños
juice of 1-2 limes
1 T sea salt
Lots of fresh cracked black pepper & a shake of Tabasco!
Tasty add-ins: Diced Mango, Shrimp, Bacon, Quinoa (give it a fun crunch)
Mix all ingredients and serve immediately. If you need to make ahead of time, press plastic wrap directly onto the surface of the guacamole to keep the air out of it and keep in the fridge.
